
The Necessary Ingredients
The dough ingredients include:
- 2 cups of flour
- Half a teaspoon of salt
- 3 quarters of a cup of water
For the samosa filling you will need:
- 1 pound of lamb (or beef, if you prefer)
- 1 chopped onion
- 1 cup of leek sliced into rounds
- A tablespoon of olive oil and additional oil for frying
- Salt and pepper
- Half a teaspoon of cumin and paprika each
- A third of a teaspoon of Allspice
Making the Dough
Combine the flour and salt in a medium bowl and start adding the water a few teaspoons at a time. Use your hands to combine until the dough comes together. The dough should neither be sticky nor crumbly. When you get the desired consistency, cover with a sheet of plastic wrap and set the dough aside.
Prepping the Filling
Add a tablespoon of oil to a pan over medium heat. Saute the leeks and onions for a few minutes and add the seasoning. Using a spoon to break up the meat, add the lamb to the pan. Remove from the heat once the meat is fully browned.
Preparing Each Samosa
Flour a clean countertop surface and roll out your dough as thin as possible. Cut the dough into 4-inch squares. Put about a tablespoon of filling on each square and brush the dough edges with water. Fold the diagonal corners to meet and form a triangle, using your fingers to press the edges together. Heat up oil in a pan and fry each samosa on each side until they brown. Place them on a plate with paper towels to dry.
