The Cream Scones Ingredients

  • 1 cup flour for pastry
  • 2 tablespoons baking powder
  • 1/4 cup of sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/2 cup of unsalted butter, cut into 1/2-inch cubes, and cooled
  • 1 1/4 cups of heavy cream, divided
  • 2 tablespoons baking powder
  • Demerara sugar for topping

How to Make the Cream Scones

Step 1

To begin making the cream scones, use parchment paper to cover a baking sheet. Mix the flours, sugar, baking soda, baking powder, and salt in a big bowl. Use a pastry cutter, two knives, or your fingers to cut the butter into pea-sized pieces before incorporating it into the flour.

Step 2

Create a well in the middle of the flour and add all but 1 tablespoon of the cream. Just until the dough comes together, gently stir the flour mixture into a cream (dough will be lumpy). Gently roll out the dough to a circle that is 1/2 inch thick, fold it in half, and then roll it out once more to a circle that is 8 inches in diameter. Using the remaining 1 tablespoon of cream, brush the dough, then sprinkle it with demerara sugar and lightly press it into the dough with your hands. Place the dough on the baking sheet after cutting it into wedges, circles, or squares. While the oven is heating, place the baking sheet in the refrigerator to chill for up to 6 hours.

Step 3

The oven should be heated to 375 degrees Fahrenheit. Scones should be baked for 20 to 25 minutes, or until firm and just browned on top. Cool for five minutes on the baking sheet before transferring to a rack to finish cooling.
